Ingredients
✔ 1 cup lightly salted dry-roasted nuts, coarsely chopped
✔ ½ cup crispy brown rice cereal
✔ ½ cup old-fashioned or quick-cooking rolled oats
✔ 1/3 cup raw pumpkin seeds or sunflower seeds
✔ ¼ cup dried blueberries or cranberries
✔ 6 dried apricots, diced
✔ 3 tablespoons mini chocolate chips
✔ 5 tablespoons brown rice syrup or light corn syrup
Instructions
Step 1: Prep Your Baking Pan
Preheat your oven to 250°C (482°F). Line a square baking pan with foil and lightly coat with cooking spray.
Step 2: Mix the Ingredients
In a large bowl, combine the nuts, rice cereal, oats, seeds, dried fruit, and chocolate chips. Drizzle with syrup and stir until evenly coated.
Step 3: Shape the Bars
Spread the mixture evenly in the prepared pan. Lightly coat another piece of foil with cooking spray and place it over the mixture, sprayed-side down. Press firmly with another pan to compress the mixture. Remove the top pan and foil.
Step 4: Bake & Cool
Bake for 20–24 minutes (metal pan) or 30–35 minutes (glass pan), until the edges begin to turn golden. Cool in the pan for 10 minutes.
Step 5: Cut & Store
Lift the baked square out using the foil and place it on a cutting board. Cut in half, then cut each half crosswise into 6 bars. Let cool completely before removing from foil.
Storage Tips
🐾 At Room Temperature: Store in an airtight container between sheets of wax paper for up to 1 week.
